Mark and I both enjoy cooking, but it is obvious that he has acquired a passion for cooking far beyond his wildest dreams.  He prefers to cook a recipe only once and then try something new.  I managed to snag a few of  the outstanding ones  and insist we cook them again and again. Below,  in no particular order, are some of our favorites.

I’ll be adding to this list from time to time so check back again.  If you are viewing this on a phone, you may have difficulty reading these.  I haven’t figured out how to adapt my images to the smaller screen.

THE BEST EVER, Beef Tenderloin!   This is a creation we crave many times on the road.  Most recently it was a super supper for our RV friends Duane and Betty.  She has been waiting for me to post this for days.

If you have ever tasted Fresh Tuna, you know it is nothing like eating canned Tuna.  If you’ve tried it, find a fisherman friend or a local Fishmonger, and get a steak or filet and start experimenting with this delicacy. To get you started here is an easy recipe we have often. (Thanks to Supermancooks.com)

Note: Better to undercook it, remember it keeps cooking til it’s on your plate.

AHI TUNA CAKES

During a visit to Anacortes, Washington we took a drive to the little village of Bow, WA.  We picked Blueberries and ended up in the gift shop where I sampled their Organic Blueberry Juice.  It was so delicious.  Imagine in one ounce of this juice you are drinking over 50 blueberries!  We bought the Juice, the pickled blueberries and the blueberry powder.  Go to their website,  bowhillblueberries.com and order the pickled blueberries and try this recipe.  MMmmm   Better yet order one of their gift boxes and get all the ingredients you need to make several of their recipes for a meal or cocktails.

AWARD WINNING! This lemon Pie is a winner every time.  It’s not your Mom’s Lemon Meringue pie, Try it… your guests will “eat it up” In a pinch, we  substitute ready-made graham cracker crust – it’s just as good.

Triple Lemon Pie

Have some Fresh halibut on hand, or any other type of whitefish filets?  This recipe is deeelish.

CHILI QUICHE

We are on the road full time and sometimes we need a quick and SIMPLE Happy Hour Treat to take to a gathering of other RVers in our camping area.  This Chili Quiche is easy and a hit at happy hour. This recipe came from one of my old Hawaiian Ohana Style Cookbooks. The cookbook benefited the Hawaii Bone Marrow Donor Registry. 

This is our Go To recipe whenever we want Tortilla Soup.  After trying many other recipes, in our opinion, this one has the most flavor & you just can’t beat it!
